  1. 2 cups pecans, finely chopped
  2. 1 cup butter, softened
  3. 1/4 cup powdered sugar
  4. 1 1/2 tsp. vanilla
  5. 2 cups flour
  6. 1/2 tsp. salt
  7. 1 cup powdered sugar for rolling


  1. In a large bowl of a standup mixer fitted with a paddle attachment cream the butter and add the 1/4 cup powdered sugar and beat until smooth.
  2. Add in the vanilla and blend well. Stir in the flour, salt and nuts.
  3. Form the dough into a ball and wrap in plastic wrap. Refrigerate for 30 minutes to one hour.
  4. Preheat oven to 325F. Then form dough into 1" balls and place on an ungreased cookie sheet 1" apart.
  5. Bake for 18-20 min. or until under side is lightly golden brown. Watch carefully. Have ready a cooling rack placed over waxed paper for easy clean up.
  6. Let cool for 5 minutes on the cookie sheet. Roll in powdered sugar and place on prepared cooling rack. Let cool completely and then roll again in the powdered sugar.
  7. These cookies freeze well.
