Christmas Rocky Road

Ingredients

  1. 150 g Unsalted butter
  2. 400 g White chocolate
  3. 150 g Gingernut Biscuits crushed into chunks
  4. 180 g Mini marshmallows
  5. 400 g Mixed candy (I used red and green Skittles)
  6. 150 g White chocolate chopped (to decorate)
  7. Sprinkles and sweets to decorate


Instructions

  1. Melt the butter and white chocolate gently in pan over a saucepan of simmering water.
  2. Stir until smooth and allow to cool for 10 minutes.
  3. Add the crushed biscuits, marshmallows and sweets and press into a small roasting pan, lined with baking paper.
  4. Melt the remaining white chocolate, drizzle over the top and add decorations.
  5. Chill for about 2 hours. Remove from the fridge and cut into chunks.
