Caramel Rolo Fudge

  1. 3 c. mini marshmallows
  2. 2 c. sugar
  3. 1 c. heavy cream
  4. 6 tbsp. butter
  5. 3 c. white chocolate chips
  6. 1 c. Caramel
  7. 30 Rolos, unwrapped, half chopped


  1. Line an 8” pan with parchment paper and coat evenly with cooking spray, then set aside.
  2. In a medium saucepan over medium heat, combine marshmallows, sugar, heavy cream and butter.
  3. Cook, stirring often, until butter and marshmallows are almost melted, 5 to 6 minutes.
  4. Bring mixture to a boil and cook, stirring occasionally, for 5 minutes. Remove from heat.
  5. Stir in caramel until completely combined. Place white chocolate in a large bowl and pour fudge mixture over chocolate.
  6. Add the whole Rolos to the prepared pan and pour fudge on top. Top with the remaining chopped Rolos.
  7. Let fudge cool to room temperature, then refrigerate in pan until set, about 3 hours.
  8. Slice into squares and serve.
