Reuben Dip

With St Patrick’s Day around the corner, I wanted to share another favorite Irish inspired recipe. Hot, homemade Reuben Dip.

If you like Reuben sandwiches, then you’ll love this Reuben Dip. And, well, if you don’t love Reuben sandwiches (like me, actually), you’ll probably still love it (like I definitely do).

Reuben Dip is made with the same ingredients as a Reuben sandwich, and is SO easy to make in less than 30 minutes. Creamy cream cheese and Thousand Island dressing, tangy sauerkraut, salty corned beef, and gooey melted cheese, all in this one dip.

If you love Reuben sandwiches, you’re going to LOVE Reuben Dip.

It’s all the same ingredients but mashed up in a pan and baked until hot and bubbly. No further questions, Your Honor.


It’s one of my favorite dips (hard to play favorites when the contenders are Spinach Artichoke Dip and Bacon Dip) and I was pretty excited about all the “recipe testing” involved with preparing it three different ways.

Personally, I like to make a little extra slow cooker corned beef and cabbage, then chop up the extra to use in this recipe.

But, since the Reuben Dip is delicious all year long, not just for St Patrick’s Day, you can also use the corned beef from the deli counter. You’ll need about a half pound.

Here are my tips for Reuben Dip Domination.

First, make your own Homemade Thousand Island Dressing if you can stand it. Unlike making homemade ranch dressing, which involves buttermilk, thousand island dressing comes together with all basic pantry ingredients.

INGREDIENTS

  • 1 lb. diced corned beef
  • 8 oz. shredded swiss cheese
  • 1 (14-oz.) can sauerkraut, drained very well (place in strainer & press out liquid)
  • 3/4 c. mayonnaise
  • 1/4 c. Thousand Island dressing
  • kosher salt, if desired (I don't usually add any salt.)
  • freshly ground black pepper

INSTRUCTIONS

  1. Preheat oven to 400° F.
  2. In a large bowl, stir all ingredients together with a spatula. 
  3. Transfer mixture to a serving dish that can be placed in the oven (a large pie pan works great!). 
  4. Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.
  5. Serve with your favorite sturdy crackers. Rye crackers and bagel chips are tasty with this.
